JOB SUMMARY:
The Dietary Supervisor is responsible for the Dietary Department. This includes overseeing preparation of foods, dietary personnel, and care conferences for Extended Care Facility residents
ESSENTIAL DUTIES:
Plan daily menu for acute care, extended care, therapeutic and special dietary needs, cafeteria services, and catering requests.
Develop individualized meal plans and menus for patients/residents with special dietary needs.
Plan menus for in-house luncheons, dinners, and other special events. Coordinates preparation and presentation of foods.
Order all food and other related supplies; maintain inventory control.
Plan dietary staff work schedules.
Organize staff work assignments; set up daily production sheets.
Hire dietary staff members as needed to maintain adequate staffing levels, conduct employee evaluations: terminate staff as appropriate.
Maintains financial records for department purchases and expenditures;
Compile monthly statistics and production profile.
Complete daily meal counts; cost-out additional nourishment, supplies, and meals provided.
Maintain cafeteria meal charge records; provide payroll with a monthly list of employees with meal charges requiring payroll deduction.
Perform miscellaneous administrative activities related to Department Head function; attend Department Head meetings.
Maintain quality assurance with temperature checks, tray checks, etc.
Provide continued monitoring and evaluation of resident and patient nutritional status; provide appropriate charting.
Attend all Patient Care Conferences; provide nutritional status evaluation and update related to specific identified needs and appropriate documentation and charting.
Provide inpatient and outpatient counseling as ordered by physicians.
Serve on Hospice Interdisciplinary Team.
Conduct staff in-service and cross-training programs.
Evaluate menu and nourishment for nutritional quality; insure that meals and nourishment are nutritionally adequate.
Interpret diet orders and monitor dietary response.
Essential job duties required by ORS rules and regulations.

Insuring that all meats are palatable, attractive, nutritionally adequate, served at proper temperature related to safety and sanitation concerns, and served at appropriate times.
Provision of nutritionally adequate menus that also meet the specific needs of patients and residents.
Insuring that staff follows the menus appropriately.
Insuring that snacks and nourishment are provided as ordered and appropriately prepared.
Insuring that all foods are handled and prepared safely related to sanitation guidelines.
Insuring that the proper temperature of foods is maintained during storage and preparation and that appropriate refrigeration is maintained.
Insuring that rules and regulations pertaining to dishwashing and general cleaning are strictly followed.
Maintenance of sufficient staff.
Insuring the safety and protection of employees.
Essential Policies include:
Responsible for implementation and update of all department policies and procedures.
Daily operations are coordinated through daily production sheets that the Director provides to each position.
Serve on in-house committees.
Represent hospital as speaker to local clubs and groups.
QUALIFICATION REQUIREMENTS:
Education and License:
High School Diploma or equivalent, required.
Completion of culinary school, or attend vocational or apprenticeship program, preferred.
Certifications
Food Handlers
ServSafe Card
Basic Life Support (BLS)
Experience:
One year of supervisory experience in an institutional dietary service and shall participate in continuing education annually.
Additional Qualifications:
Overall supervision of the dietary department shall be assigned to a full-time director who is a registered dietitian.
Must have knowledge of Geriatric Dietary needs and therapeutic diets.
Must have competent writing and speaking skills.
Experience in the operation of typewriter, calculator, adding machine, cash register, photocopy machine, and audio-visual equipment.
Ability to operate a computer/word processor.
Must be able to work a variety of hours within a flexible schedule.
Must be able to work independently and be self-directed.
Must be able to make appropriate and professionally sound decisions quickly and usually under pressure.
Must have the ability to deal effectively with others as a team member.
Be helpful and friendly to new staff. Help integrate into the team process.
WORK ENVIRONMENT:
Works indoors in an air-conditioned environment. Must use Safety precautions for self and oversee safety of staff members. Including chemical exposures (cleaning solutions and chlorine bleach), Safety Hazards (exposure to sharp knives, hot ovens, stovetops, and grill within the work area), exposure to infectious materials via patient trays, and protective equipment.
PHYSICAL DEMANDS:
Frequent use of computer and phone, and other standard office machines. Must be able to stand, sit, stoop, twist, kneel, reach, push, pull using proper body mechanics and move/lift varying amounts of weight to a maximum of 50 lbs.
This is a Full-Time position of 40 hours/week with full benefits.
